Sticky Date & Chocolate Chip Pudding
This is a moist, delicious pudding with the rich addition of chocolate chips. Sticky date pudding was a favourite in our house growing up and me being me, just couldn't help to tweak it here and there. I have tried it out with both white and dark chocolate but we prefer dark over white. Both are very nice however and it comes down to your preference of chocolate. Its a winner because its so easy to make and who can turn their nose up at enjoying a mix of caramel and chocolate?

Ingredients
- 250gm chopped dates
- 1 tsp baking soda
- 1 1/2 cups boiling water
- 125gm salted butter
- 1 cup muscovado sugar
- 1 teaspoon vanilla essence
- 2 large eggs
- 100gms dark chocolate finely chopped
- 1 3/4 cups plain flour
- 3 tsp baking powder
- 1 tsp mixed spice
- Sauce:
- 1 cup muscovado sugar
- 300ml cream
- 1 tsp vanilla essence
- 60gm salted butter
Directions
- Place dates and baking soda in a bowl and pour over boiling water.
- Leave to stand 15 minutes.
- Cream together the butter, sugar and vanilla.
- Beat in eggs one at a time beating well after each.
- Fold in date mixture, chopped chocolate and sifted flour,baking powder and mixed spice.
- Mix until well combined
- Spoon mixture in a lined 23cm square or round pan
- Bake at 180°C for 35-40 minutes or until a skewer inserted comes out clean.
- Allow to stand 5 minutes before turning out pudding onto a serving plate.
- Pierce pudding all over with a skewer.
- Pour over 1/2 cup of warm sauce and stand 10 minutes.
- Slice into pieces and serve with remaining sauce.
- Sauce:
- Combine sugar, cream, vanilla and butter into a saucepan.
- Cook over medium heat stirring frequently until sauce boils.
- Reduce heat to low and simmer 2 minutes.
