Lime & Coconut Folly


This dessert is quite fun to make since all the ingredients are just wizzed together in a food processor. No Baking required!

It is rich - so I only serve small portions.

Incidently - Lime & Coconut 'Folly' is my own adaption of a very old English dessert, 'Fool' which was a sweet mix of pulped fruit and cream served in Medieval England.

Ingredients

  • 250 g. cream cheese, softened. ('lite' if liked)
  • 3/4 cup caster sugar
  • 2 tablespoons very finely grated rind of lime
  • 1/4 cup lime juice
  • 1 cup canned coconut cream ('lite', if liked)
  • 1/2 cup dessicated coconut
  • shaved chocolate (optional)
  • shortbread (optional)

    Directions

    1. Just dump everything (except shaved chocolate) into the food processor and blend with an on/off pulse action until it is smooth.
    2. Pour into 6 small dessert dishes.
    3. Refrigerate until set.
    4. Top with a little shaved chocolate, if desired.
    5. Nice accompanied with shortbread
