Darls Carrot Cake
This is to die for moist and delicious. If I had a $1 every time I'm asked for this recipe I would be very rich, just like this cake never makes it to lunchboxes in our house.

Ingredients
- 250g plain flour
- 2teaspoons baking soda
- 1teaspoon salt
- 2teaspoonsmixed spice
- 2teaspoons cinnamon
- 4eggs
- 165g brown sugar
- 290gsugar
- 2cups oil
- 200g grated carrot
- 120g walnut pieces
- 135gcrushed pineapple (well drained)
Directions
- put flour soda salt and spices in bowl
- mix sugars eggs oil carrots walnuts and pineapple together
- pour egg mixture into flour and stir
- pour into a lined buttered 23cm round spring release tin
- bake at 150c for 1and a half hours
- insert a skewer in centre of cake to see if its cooked
- allow to cool completely before icing with cream cheese icing
- i like to add 1cup sultanas
