In a world over saturated in unhealthy and unethical foods, these ragga-muffins are a super healthy summer treat for the whole family.

They work best for the planet and our tummies if you use organic ingredients. Yum!

Instructions
  1. Preheat the oven to 180C.
  2. Put the dates, maple syrup and bicarbonate of soda in a saucepan over medium heat, stir until well combined; bring to the boil.
  3. Remove from the heat and set aside to cool.
  4. Transfer the date/maple mixture to a mixing bowl.
  5. Add the apples, banana, carrots, sultanas, walnuts, orange zest and juice, mix well, and fold in the flour and baking powder.
  6. Spoon the mixture into a pre-greased muffin tin.
  7. Bake for 30-35 minutes, or until a skewer comes out clean from the centre of a muffin.

  1. I loooooove these! After several modifications mine are now gluten and wheat free, banana free (I don’t like bananas….), not too sweet and spiced up with cinnamon, nutmeg, cloves, ginger, salt and vanilla. Double recipe fits in 2 medium size rectangular Pyrex baking dishes. After cooling I slice them in to squares and freeze them. They last beautifully and are absolutely delicious all year round.

  2. The best nutritious yummy treat ever! But my muffins were a total disaster–stuck to the papers and/or muffin cups. So we pour the batter into a pan and make Summer Ragga BARS! Except we eat’em year round and always have some in the freezer for emergencies.
