Summer Ragga-Muffins
This recipe is egg, dairy, wheat and sugar free!
In a world over saturated in unhealthy and unethical foods, these ragga-muffins are a super healthy summer treat for the whole family.
They work best for the planet and our tummies if you use organic ingredients. Yum!

Ingredients
- 1 cup dates, pitted and chopped
- ½ cup maple syrup
- ½ tsp bicarbonate of soda
- 2 grated apples
- 2 grated carrots
- 3 small ripe mashed bananas
- 2 oranges - zest and juice
- 1 cup sultanas
- ½ cup chopped walnuts
- 3 cups of spelt flour
- 3 teaspoons of baking powder
Directions
- Preheat the oven to 180C.
- Put the dates, maple syrup and bicarbonate of soda in a saucepan over medium heat, stir until well combined; bring to the boil.
- Remove from the heat and set aside to cool.
- Transfer the date/maple mixture to a mixing bowl.
- Add the apples, banana, carrots, sultanas, walnuts, orange zest and juice, mix well, and fold in the flour and baking powder.
- Spoon the mixture into a pre-greased muffin tin.
- Bake for 30-35 minutes, or until a skewer comes out clean from the centre of a muffin.

just one point of clarification, spelt is technically a type of wheat so you can't really call these muffins wheat-free... though of course some people who can't eat regular wheat are fine with spelt.

hi Eroica, thanks for the info. and yip, i know, but as you said, some wheat allergy people can tollerate spelt. obviously the recipe can be made with wheat flour or other flours people use. and honey instead of maple - but remember that heating honey kills it's healthy properties :)

hi beast. not exactly... spelt is spelt. even when it's spelt backwards. yes, spelt is a form of wheat. it's like saying honey is a sugar syrup. yes it kind of is, but it's kind of not. some people are allergic to wheat, but not spelt. which would suggest that they have a different make up.

If you want to update it to glutenfree just use millet-flour! I tried it out. Millet is glutenfree AND basic(alkaline) so another plus to this RaggaMuffiNZ-recipe. And caused by its soaking characteristics it even fluffs up the dough even more!
