Easy And Delicious Chocolate Feather Cake
My husband used to make this cake and eat the whole thing on his own when he was studying for exams in High School. I have started using it for Birthday cakes and it is an awesome moist, light cake that rises perfectly every time and is quick and easy to make and can be doubled or tripled or even quadrupled without a problem. Though you need to separate the eggs you use the yolks too so no wastage.

Ingredients
- 2 eggs separated
- 125ml Castor Sugar
- 200ml Flour
- 25ml cocoa
- 5ml Baking Powder
- Pinch of Salt
- 2ml Vanilla Essence
- 75ml Milk
- 25ml Butter
Directions
- 1) Grease and paper a 22cm cake tin
- 2) Preheat oven at 180'c
- 3) Sift flour, cocoa, salt and baking powder
- 4) Melt Butter, add milk and when hot remove from Stove
- 5) Stiffly beat egg whites, add sugar and beat until dissolved, add yolks
- 6) Add hot milk to egg mixture, stir gently
- 7) Fold in dry ingredients, pour into prepared tin and bake for about 20mins
- 8) Cool and Ice
