Christmas Cake With Coca Cola
This is a very moist yummy cake which is a favourite with everyone I have made it for. Was in our cake decorating magazine

Ingredients
- 3lbs mixed fruit
- 1/2 lb brown sugar
- 1tsp each of rum, vanilla, and almond essence.
- 1 tsp instant coffee
- 1 tsp mixed spice
- Put in a bowl and pour over 330mls coca cola.
- Cover bowl and leave to soak overnight
Directions
- Next day add 1/2 lb butter melted5 beaten eggs12 oz flour1 tsp baking powderBake 3 1/2 hrs at 120 degrees in a 9 x 9 inch tin
