Best Ever Banana Cake

With the goodness of 3 bananas this cake is very moist and incredibly tasty, one slice is never enough especially with chocolate icing, you can also serve it up with yoghurt. Try it and I promise you won't be disappointed

  • 125g softened butter
  • 11/2 c caster sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1/2 tsp vanilla essence
  • 250g flour
  • 1tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 pinch all spice
  • 1/2 tsp ground ginger
  • 1/2 c milk
  • 1/2 lemon juice


  1. butter a round 20cm cake tin and preheat oven to 180.
  2. Cream the butter and sugar until it becomes cream and pale, beat in the eggs one at a time then add banana and vanilla
  3. Sift dry ingredients and add them to the creamy butter alternating with the mik. Spoon into the cake tin and bake for approx 45 mins.
  4. Ice with chocolate icing or leave uniced
