'Just Like A Bought One' Blueberry Muffins (Dairy Free)
A recipe that i adapted, mixed up and experimented with until it tasted as good as a bought one, just with a lot less fat, no artificial additives and less sugar! Oh, and it's dairy free too!

Ingredients
- 1 tin of blueberries (strained of juice) (or you can use a cup of frozen blueberries)
- 1 C Self raising Flour
- 3/4 C Wholemeal Flour
- 2 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 tsp ground ginger
- pinch of salt
- Grated rind of one small lemon, orange or lime (or all 3!)
- 120 gram tin of watties baby apples
- 1/2 C Sugar
- 1/2 C Canola oil
- 1 large Egg
- 1/4 C Soy Milk
Directions
- Heat oven to 200 Degrees C, and grease a 12 cup muffin pan (or 2 6 cup ones)
- Strain canned blueberries in a seive to remove juice.
- Mix first 7 ingredients in a bowl, set aside.
- In another bowl mix apples, sugar, canola oil, egg and milk until well combined, and fluffy.
- Pour the egg mixture into the flour and mix gently, fold in blueberries until just combined.
- Fill your muffin pans until 3/4 full (this makes big fat juicy muffins)
- Bake for approx 15-20 minutes until golden and muffins bounce back when touched.
- Leave to cool for 5 minutes in your muffin pans before turning out to cool on a cooling rack.
- These are suitable to freeze, and make a great addition to lunchboxes
