'Just Like A Bought One' Blueberry Muffins (Dairy Free)


A recipe that i adapted, mixed up and experimented with until it tasted as good as a bought one, just with a lot less fat, no artificial additives and less sugar! Oh, and it's dairy free too!

Ingredients

  • 1 tin of blueberries (strained of juice) (or you can use a cup of frozen blueberries)
  • 1 C Self raising Flour
  • 3/4 C Wholemeal Flour
  • 2 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp ground ginger
  • pinch of salt
  • Grated rind of one small lemon, orange or lime (or all 3!)
  • 120 gram tin of watties baby apples
  • 1/2 C Sugar
  • 1/2 C Canola oil
  • 1 large Egg
  • 1/4 C Soy Milk

Directions

  1. Heat oven to 200 Degrees C, and grease a 12 cup muffin pan (or 2 6 cup ones)
  2. Strain canned blueberries in a seive to remove juice.
  3. Mix first 7 ingredients in a bowl, set aside.
  4. In another bowl mix apples, sugar, canola oil, egg and milk until well combined, and fluffy.
  5. Pour the egg mixture into the flour and mix gently, fold in blueberries until just combined.
  6. Fill your muffin pans until 3/4 full (this makes big fat juicy muffins)
  7. Bake for approx 15-20 minutes until golden and muffins bounce back when touched.
  8. Leave to cool for 5 minutes in your muffin pans before turning out to cool on a cooling rack.
  9. These are suitable to freeze, and make a great addition to lunchboxes
