Mums Muff Muffs


This is a recipe that I have adapted from my mother's recipe with a lot of success and variety, the white chocolate and berry variety is a extra favourite of the family

Ingredients

  • 1/2 cup of canola oil
  • 1 cup of brown sugar
  • 2 large eggs
  • 1 cup of either plain yogurt, sour cream or milk
  • 2 and 1/4 cups of plain flour
  • 4 and 1/4 teaspoons of baking powder
  • Raw sugar topping

    Directions

    1. Beat oil and brown sugar together until thick and creamy, add eggs one by one, beat for 30-60 seconds add yogurt, remove beaters and fold in flour mixed with baking powder. Place in muffin tins and sprinkle generously with raw sugar. Bake at 200 degrees for 20-25 minutes until cooked in centre
    2. Varieties:
    3. 1. 1/2 cup of white chocolate buttons with 3/4 cup of berries and flavoured yogurt.
    4. 2. 1/2 cup of milk chocolate buttons with 3/4 cup of berries and flavoured yogurt
    5. 3. 1/3 cup of barkers lemon curd mixed with yogurt and when filling muffins tins, make a small well in centre and add teaspoon of curd and ice with lemon icing.
    6. 4. Ice with orange icing made with juice, zest and cream cheese.
