Mums Muff Muffs
This is a recipe that I have adapted from my mother's recipe with a lot of success and variety, the white chocolate and berry variety is a extra favourite of the family

Ingredients
- 1/2 cup of canola oil
- 1 cup of brown sugar
- 2 large eggs
- 1 cup of either plain yogurt, sour cream or milk
- 2 and 1/4 cups of plain flour
- 4 and 1/4 teaspoons of baking powder
- Raw sugar topping
Directions
- Beat oil and brown sugar together until thick and creamy, add eggs one by one, beat for 30-60 seconds add yogurt, remove beaters and fold in flour mixed with baking powder. Place in muffin tins and sprinkle generously with raw sugar. Bake at 200 degrees for 20-25 minutes until cooked in centre
- Varieties:
- 1. 1/2 cup of white chocolate buttons with 3/4 cup of berries and flavoured yogurt.
- 2. 1/2 cup of milk chocolate buttons with 3/4 cup of berries and flavoured yogurt
- 3. 1/3 cup of barkers lemon curd mixed with yogurt and when filling muffins tins, make a small well in centre and add teaspoon of curd and ice with lemon icing.
- 4. Ice with orange icing made with juice, zest and cream cheese.
