Granny's Johnny Allsorts Cake


Delicious, delicate and decadent, this elegant and simple-to-make spongy slice comes with tangy marmalade and sweet raisins in the base and creamy icing and coconut for the topping. There are infinite variations on this core theme - serve with yoghurt or cream, have elegant slices for a ladies' after noon tea or rumbustious slabs for the family or simply use your imagination. Its versatility and taste are winners in our family.

I have my Southland grandmother's admonitions and directions still pasted in the grimy much-used page of my cookbook: 'This is the cake you used to be siofond of. You may try it when are not such a high price.' !

Ingredients

  • 5 ozs butter ( 141.75 grams )
  • I small cup sugar
  • 2 eggs
  • One quarter small cup milk
  • 1.5 cups flour
  • 1 teaspoon baking powder
  • 2 tablespoons marmalade
  • 2 cups raisins
  • Vanilla essence

Directions

  1. Cream butter and sugar
  2. Add eggs
  3. Add dry ingredients
  4. Add vanilla essence
  5. Add raisins
  6. Mix all well
  7. Preheat oven
  8. Line tin with baking paper
  9. Place in 'sandwich' tin
  10. Smooth top with knife
  11. Average oven
  12. About 20 minutes cooking time
