Marias Dairy Free Delicious Chocolate Cake
This is a very easy recipe which can double as a dessert or special occassion cake. You can either cover it with choclate icing or I often make a chocolate ganash and decorate with slivered almonds.
My friend Maria gave me this recipe and I made it for another friends birthday and took it to Invercargill and all the golf girls asked for the recipe and they have made it and taken to morning teas at their work and has been really popular
I tell everyone it has no calories because its dairy free. HA HA

Ingredients
- 2 cups sugar
- 1 cup cocoa
- 2 cups flour
- 2 teas Baking Soda
- 1/2 teas salt
- 1/3 cup oil (I use Grapeseed)
- 2 eggs
- 2 teas vanilla essence
- 2 cups water
Directions
- Sift dry ingredients.
- Put all wet ingredients together and whisk.
- Place in 25cm lined or greased round tin or slab tin and bake at 150 degrees C for 45 - 60 minutes
- Melt `150 grams SR Dark Chocolate Drops over a double boiler. Add 100 mls cream and stir with a whisk. When smooth, spread over cake and sprinkle with slivered almonds Delishmo.

Maria is obviously not allergic to dairy. I have yet to find chocolate that hasn't got dairy in it or has been made on equipment that also processes dairy.
