Creative Cranberry, Choc & Pumpkin Seed Cookies

The mix of taste and texture is really complementary. Each bite combines sweet and slightly tart with guilty chocolate and healthy seeds and oats, delivered with elements of crunch, melt and chew - An awesome combo!

The recipe comes from my mothers well worn hand written recipes, probably adapted from a NZ woman's magazine.

Its a winner because Kid's, Adults, Men and Women love them. They are a simple gourmet recipe to bring something new to your cookie jar.

Ingredients

  • 200g butter
  • 1/4 cup chunky peanut butter
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla (pure extract if possible)
  • 2 cups rolled oats
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 cup dark chocolate bits
  • 100g packet pumpkin seeds
  • 1 cup dried cranberries

Directions

  1. Soften butter.
  2. Beat in peanut butter, sugar, brown sugar, egg and vanilla.
  3. Add rolled oats.
  4. Sift flour and baking soda.
  5. Mix into butter mixture with Chocolate bits, pumpkin seeds and cranberries.
  6. Roll mixture into balls (approximately 2 tablespoons each)
  7. Place on lined baking tray.
  8. Press tops of biscuits with a fork.
  9. Bake at 190 degrees C for 10 - 12 minutes.
  10. Cool on wire rack.
  11. Enjoy!

Makes 52 (This is a large batch, you can 1/2 mixture or freeze) 10-12 mins 15 mins approx.

This is indeed a fantastic recipe, you are right it did come from a New Zealand Women's Magazine. I got my recipe from it a year or so ago, it has become a family favourite ever since and instead of the darker chocolate I always add white chocolate and it goes really well with the cranberries. I have also substitued finely diced dried apricots instead of the cranberries and added the dark chocolate to that and it is also very good indeed. I wish you well with this recipe.
