AND you can vary the filling, limited only by your imagination!
Its a winner because not only is it a quickie, its a dear NZ familiar,in party clothes...in very good taste of course!

Ingredients

  • ONE CUP FLOUR
  • 50G BUTTER (BE GENEROUS)
  • 2 TEASPOONS BAKING POWDER
  • ONE TABLESPOON SUGAR
  • PINCH SALT
  • MILK

    Directions

    1. PUT ALL INGREDIENTS EXCEPT MILK IN YOUR BLENDER, (OR PINCH THE BUTTER THROUGH IF NO BLENDER).
    2. PUT THE WHIZZED MIX ON YOUR BENCH AND ADD MILK LITTLE BY LITTLE USING A SPATULA, UNTIL MIX IS VERY TACKY AND STICKS TO YOUR HANDS.
    3. USE ENOUGH FLOUR UNDER AND OVER THE TACKY MIX TO BE ABLE TO PAT IT OUT INTO 20cm square about 2cm thick.
    4. PUT CHOPPED APPLE ON TOP, CINNAMON, AND DRIZZLE MAPLE SYRUP OVER ALL. ROLL UP, PINCH THE ROLL A BIT THINNER, OR THE SCONES WILL BE TOO BIG. IT WILL CUT UP INTO ABOUT A DOZEN OR MORE SCONES.
    5. BAKE IN A HOT OVEN, ABOUT 8 MINUTES.
    6. TRY DIFFERENT TOPPINGS ,SAVOURY AND SWEET. DON'T LIMIT YOUR IMAGINATION LIKE: CHEESE AND TOMATO SAUCE, RHUBARB AND BROWN SUGAR, BACON BITS AND CHEESE AND CHUTNEY, DATE, CREAM CHEESE AND LEMON HONEY

    tried this recipe when at home on a not so nice, stormy afternoon... couldn't have had anything better than these scones, fresh from the oven with a hot cup of tea. thank you for sharing. this recipe definately gets my vote :) this is sure to become a favourite with my family also

    I made the cinnamon and apple version today, and was very pleased with the result.
    I look forward to trying some of the other versions and indeed, experimenting perhaps with some versions of my own. I used half a cup of milk which made the mix a little harder to handle, but , the T stickier the mix, the lighter the end result, soit was worth it even if ones fingers did get a bit messy.
    I was pleased that I thought to place some baking paper on the tray beneath the 'scones' though. It meant a much quicker and easier clean up, and also that a little extra drizzle of maple syrup could be used over the top of each one. Thank you Patricia.
