Fantastic Rhubarb Pie


Make Shortcrust pastry, line a flan dish and put in the fridge to keep cold. Mix together, 3 cups of diced rhubarb and 1 Cup diced Apple. add one Egg and 3/4 Cup of sugar, also 2 Tablespoons of Flour. Mix all well together and put into the pastry base. Add a sliced (not mashed) Banana for the secret ingredient.
Cook in hot oven 200 deg. C for approx. 30 mins.
Great hot with Cream or cold on the Coffee table.

Ingredients

  • For short Pastry:
  • 1 Cup Flour, (6 0z)
  • 3 ozs Butter, little salt.
  • Crumb together
  • Cold water to mix
  • Filling:
  • 3 Cups diced rhubarb
  • 1 Cup diced Apple
  • 1 Egg
  • 2 Tablesps. Flour
  • 3/4 cup Sugar
  • 1 sliced Banana

Directions

  2. Put all filling ingredients together and mix well. Do not leave out the flour as this thickens the juice.
  3. Put into the prepared dish and smooth the top. decorate with any left over pastry and cook in a hot oven 200 deg. C for approx. 30 minutes or until it looks Fantastic.
  4. Serve hot with cream or Ice cream , or cold as a snack
  5. TRULY A FANTASTIC DESSERT
