Cream Cheese Pumpkin Roll


A wonderful party desert that always has people guessing what delicious ingredients its compiled of. A must for entertaining!! Passed on from a friend and first served at our engagement party it has been requested at every social gathering since.

Ingredients

  • 3 eggs
  • 3/4 cup sugar
  • 2/3 cup cooked pumpkin
  • 1 teaspoon of lemon juice
  • 3/4 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped nuts
  • Icing sugar
  • Cream Cheese Filling
  • 250g cream cheese
  • 1 cup icing sugar
  • 4 teaspoons butter
  • 1/2 teaspoon vanilla

Directions

  1. beat eggs for 3 minutes. Gradually add the sugar, then stir in the pumpkin and lemon juice.
  2. Sift the dry ingredients together and fold them into the egg mixture.
  3. Spread the batter evenly over the bottom of a greased 13x9 cookie sheet and sprinkle with nuts.
  4. Bake at 190 degrees until done, (aprox 15mins)
  5. Turn the cake out onto a clean cloth sprinkled with icing sugar, starting with a long edge roll the cake in the cloth and leave to cool.
  6. While the cake is cooling, beat the filling ingredients together until smooth.
  7. Unroll the cake, spread the filling to the edges,
  8. Re-roll without the cloth, trim ends and chill.
  9. Cut into 1/2'' slices.
