12 Minute Carrot Cake
THE BEST, FASTEST carrot cake in the world. Cooked in the microwave, stays moist for up to 3 days in the fridge but believe me, it wont last 3 days! Perfect for a last minute dinner party or fun for the kids to try!

Ingredients
- 1 and 1/2 cups of plain flour
- 1 cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp all spice
- 1/2 tsp salt
- 1 cup grated carrot (medium grate not fine)
- 2/3 cup vegetable oil
- 2 eggs
- 1/2 cup of crushed pineapple with syrup
- 1 tsp vanilla essence
- Icing:
- 125g cream cheese softened
- 50g butter
- 2 and 1/2 cups icing sugar
- Small squeeze of a lemon
Directions
- Combine flour, sugar, baking powder, baking soda, spices, salt and carrot. Hand beat in the remaining ingredients and pour into a well greased microwave ring. Cook on medium for 10 -12 minutes or until a scewer (or thin knife) comes out clean.
- Cool one a rack with plastic wrap around it to contain moisture.
- For the icing: Beat all ingredients together and pour over the cake.
- YUM!
