12 Minute Carrot Cake


THE BEST, FASTEST carrot cake in the world. Cooked in the microwave, stays moist for up to 3 days in the fridge but believe me, it wont last 3 days! Perfect for a last minute dinner party or fun for the kids to try!

Ingredients

  • 1 and 1/2 cups of plain flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp salt
  • 1 cup grated carrot (medium grate not fine)
  • 2/3 cup vegetable oil
  • 2 eggs
  • 1/2 cup of crushed pineapple with syrup
  • 1 tsp vanilla essence
  • Icing:
  • 125g cream cheese softened
  • 50g butter
  • 2 and 1/2 cups icing sugar
  • Small squeeze of a lemon

Directions

  1. Combine flour, sugar, baking powder, baking soda, spices, salt and carrot. Hand beat in the remaining ingredients and pour into a well greased microwave ring. Cook on medium for 10 -12 minutes or until a scewer (or thin knife) comes out clean.
  2. Cool one a rack with plastic wrap around it to contain moisture.
  3. For the icing: Beat all ingredients together and pour over the cake.
  4. YUM!
