Alcoholics Christmas Fruit Cake


My mother makes this cake and is a constant at all family christmas events and major birthdays. Can be made early in the year or just a couple of months before christmas. Is still suitable for non-drinkers and children. For extra strong follow directions in brackets and make early in the year to allow to age and strengthen. Enjoy:)

Ingredients

  • Sultanas- 1.25Kg
  • Raisins- 350g
  • Currants- 175g
  • Cherries- 175g
  • Peel- 175g
  • Brandy- 3/4Cup
  • Butter- 350g
  • Brown Sugar- 2Cups
  • Eggs- 6
  • Jam- 3Tbsp
  • Flour- 3 3/4Cups
  • Mix Spice- 1 1/2 tsp
  • Cinnamon- 1/4tsp
  • Nutmeg- 1/4tsp

Directions

  1. Place all fruit in large basin, add rum, whiskey, brandy or sherry.
  2. Cover and stand overnight.(Can leave for up to a week but you need to add an extra 3/4cup of chosen alcohol after 3-4 days.)
  3. Preheat oven to 150C
  4. Cream butter until soft.
  5. Add brown sugar and beat until combined.
  6. Add peel. Can be left out if desired.
  7. Add eggs one at a time and beat well after each addition.
  8. Add jam
  9. Place half creamed mixture and sift half dry ingredients into fruit mixture.
  10. Mix thouroughly.
  11. Add rest of the creamed mixture and dry ingredients and mix thouroughly.
  12. Place mixture into prepared tin.
  13. Cook for 1hr@150C then reduce to 140C for further 3-3.5hrs

24cm square by 8cm deep 4-4.5 hrs Ovrnight + 1hr for mixing
