N.Z'S Best Banana Walnut Muffins
It is healthy, scrumptious and can be altered to achieve different tastes. I've been using it since 1985 when it was published in the 13th May 1985 issue of NZ Womens Weekly.
It is so moist and flavoursome.

Ingredients
- 1.1/2 cups flour (can be wholemeal)
- 1.1/2 tsp baking powder
- 1 tsp baking soda
- 1.1/2 cups bakers bran (cheap from Bin Inn)
- 1/2 cup raw sugar
- 1/2 cup chopped walnuts
- 1/4 - 1/2 cup chocolate chips (optional)
- 100 g melted butter OR 1/2 cup cooking oil
- 2 very ripe bananas (better if have been prefrozen then thawed a little)
- 1 egg
- 1/2 cup milk + if needed
- 1/2 cup natural yoghurt (2 small pottles) whatever flavour you have in your fridge - makes for interesting tastes
Directions
- Preheat oven to 220 deg C.
- Sift flour, baking powder, soda into bowl.
- Stir in bran, sugar and walnuts and choco chips if using
- In another bowl beat egg with fork and add butter/oil, yoghurt and milk - whisk with fork.
- Make well in centre of dry ingreds. Add banana/rhubarb
- Add wet ingredients and gently fork all through till mixed.
- Don't overmix.
- Grease metal muffin tins (if using silicone - don't need to grease
- Put spoonfuls into tins - if fill to top will make 12
- If only 3/4 fill will make 18
- Bake at 220 deg C for 15 - 20 mins.
- If using thermowave oven - will take less time.
