Mad Ma's Passionfruit Mousse Cheesecake
This recipe was a high school project. The cheesecake was converted to a mousse and has been a huge hit.

Ingredients
- 200gm coconut macaroons
- 1 cup coconut
- 125gm melted butter
- 4 separated eggs
- 3/4 cup of caster sugar
- 250gm sour cream
- 1 Tsp gelatine
- 1/4 cup of water
- 3/4 cup of passionfruit pulp
Directions
- Mix macaroons, coconut and butter to make base
- Beat egg yolks and sugar 'til thick
- Add sour cream and mix again
- Boil water and add gelatine, mix well
- Add to egg yolks
- Beat egg white 'til thick and add passionfruit
- Mix both egg mixtures together
- Pour on to base and chill for 12 hours
