Thrifty Chocolate Cake.
This recipe is the simplest cake to make,is most inexpensive, it keeps moist for days is very versatile: eg, make as large cake, muffins, cream cupcakes etc.
I found the recipe in a very old recipe book, altered it a little and I now make it regularly. It is suitable as a birthday cake, iced; as chocolate butterfly cakes with the centre cut out and filled with raspberry jam and cream and dusted with icing sugar or even as individual chocolate puddings ( heated) served with custard and cream

Ingredients
- 1 3/4 cups flour
- 1 1/2 cups sugar
- 4 tablespoons cocoa powder
- 1 teaspoon baking soda
- pinch of salt
- 2 lightly beaten eggs
- 1/2 cup cooking oil
- 1/2 cup water
- 1 teaspoon vanilla essence
- 1 teaspoon vinegar.
Directions
- Sift dry ingredients into a large bowl
- Make a "well" in middle
- In another bowl, lightly beat the eggs,
- add oil, water, vanilla and vinegar
- Pour liquids into "well" of dry ingredients
- Mix lightly with a whisk until all mixed together.
- For large cake; bake in a lined cake tin for 1 hour at 175o C.
- For muffins or cupcakes, place in paper cases in muffin tins and bake for 20 to 30 minutes at 175o C
