Al's Mac Cheese Kiwi Style


Its more-ish, its creamy, its yellow, and its carb rich. Its one of the forgotten dishes. Wine match - Black Estate Chardonnay 2007. Delicious!

Ingredients

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 tbsp Champion Standard flour
  • 1/2 tsp dry mustard
  • 2 cups milk
  • salt
  • pepper
  • 2 cups grated tasty cheese
  • 2 cups Diamond macaroni elbows, cooked.

Directions

  1. Melt butter in a saucepan
  2. Add onion and cook until clear
  3. Stir in flour and cook until frothy
  4. Add mustard
  5. Gradually add milk stirring constantly until sauce boils and thickens
  6. Remove from heat
  7. Season with salt and pepper to taste
  8. Stir in half the cheese
  9. Add macaroni, stirring to combine
  10. Pour mixture into an oven proof dish.
  11. Sprinkle over the remaining cheese
  12. Cook at 190 C for 20 minutes
  13. Chooped cooked bacon or ham can be added to sauce if wished.
