Al's Mac Cheese Kiwi Style
Its more-ish, its creamy, its yellow, and its carb rich. Its one of the forgotten dishes. Wine match - Black Estate Chardonnay 2007. Delicious!

Ingredients
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 tbsp Champion Standard flour
- 1/2 tsp dry mustard
- 2 cups milk
- salt
- pepper
- 2 cups grated tasty cheese
- 2 cups Diamond macaroni elbows, cooked.
Directions
- Melt butter in a saucepan
- Add onion and cook until clear
- Stir in flour and cook until frothy
- Add mustard
- Gradually add milk stirring constantly until sauce boils and thickens
- Remove from heat
- Season with salt and pepper to taste
- Stir in half the cheese
- Add macaroni, stirring to combine
- Pour mixture into an oven proof dish.
- Sprinkle over the remaining cheese
- Cook at 190 C for 20 minutes
- Chooped cooked bacon or ham can be added to sauce if wished.
