Cheese Scruffins


A cheese/savoury muffin which is very puffy, light & ultra tasty!
A recipe given to me by an elderly neighbour, who has made them for 50 years, to much acclaim from family & friends...she has great grandchildren who beg for them on each visit.
I like them because they are quick & easy, melt in the mouth, & have found (just like my neighbour) they are always a hit!

Ingredients

  • 2 eggs
  • 1 cup of milk
  • salt & pepper to your taste
  • 1 cup self raising flour
  • 2 teaspoons baking powder
  • 2 cups of cheese
  • 3/4 cup bacon, onion, parsley, whatever you like (no more than 3/4 cup altogether)

Directions

  1. Beat the eggs, milk, salt & pepper together.
  2. Fold the flour, baking powder, cheese, bacon etc together.
  3. Make a well in the dry ingredients.
  4. Pour the liquid into well.
  5. Very quickly blend together with a spoon,.... do NOT overmix, speed & lightness of blending is the key.
  6. Spoon into small muffin pans.
  7. Bake @ 250 degrees C
