Crowd Pleasing No Cheese Thai Spicy Chicken & Pumpkin Pizza
This pizzas shows that it doesn't need to have cheese on it to make it enjoyable. This is always a winner with the family.
Wine match - if you're a red drinker try a spicy Shiraz, of if you prefer a white then try a Gewurtztraminer.

Ingredients
- Base -1tsp sugar
- 1/2 cup tepid water
- 1 1/2 tsp yeast
- 1 cup flour
- 1/4 tsp salt
- 1 tbsp oil
- Topping - 450g chicken tenderloins (can use other chicken cuts)
- 150g pumpkin
- 1 tbsp oil
- 2tbsp Thai Green Curry Paste
- 140g can coconut cream
- 1/4 cup fruit chutney
- 50g crispy noodles
- 3 tbsps fresh coriander
Directions
- Dough - Dissolve the sugar in the water.
- Spinkle yeast over the water and leave 10 minutes or until frothy.
- Mix the flour and salt together in a bowl.
- Make a well in the centre and add the oil and yeast mixture. Mix well, adding extra flour if necessary.
- Knead on floured board until smooth, adding more flour if necessary.
- Place on greased oven tray.
- Cook base at 200 degrees for 15 minutes.
- Topping - Cut tenderloins in half.
- Peel pumpkin and cut into cubes.
- Heat oil in frying pan.
- Cook tenderloins and pumpkin with curry paste for 5 minutes, turning often.
- Add coconut cream, cover and cook for a further 5 minutes. Spread base of pizza with chutney and cover with chicken and pumpkin mixture.
- Mix noodles and coriander together and scatter over top of pizza.
