Vegetable Pumpkin Pie


This was my Grandmothers recipe and was always served with a meat dish on special occasions. Tasts just beaut and was the family favourite growing up. I still make it.

Ingredients

  • 2 lbs pumpkin
  • 2 tbps cooked rice
  • 2 tbps butter
  • pepper and salt to taste
  • 1 cup milk
  • 2 beaten egg yolks
  • 2oz cheese

Directions

  1. cook pumpkin
  2. strain and mash
  3. add cooked rice
  4. mash together with butter, pepper and salt,milk,egg and grated cheese
  5. Put into buttered dish. Sprinkle with cheese, bread crumbs and knobs of butter.
  6. Cook 350 for 30 -40 mins or until set.
