Vegetable Pumpkin Pie
This was my Grandmothers recipe and was always served with a meat dish on special occasions. Tasts just beaut and was the family favourite growing up. I still make it.

Ingredients
- 2 lbs pumpkin
- 2 tbps cooked rice
- 2 tbps butter
- pepper and salt to taste
- 1 cup milk
- 2 beaten egg yolks
- 2oz cheese
Directions
- cook pumpkin
- strain and mash
- add cooked rice
- mash together with butter, pepper and salt,milk,egg and grated cheese
- Put into buttered dish. Sprinkle with cheese, bread crumbs and knobs of butter.
- Cook 350 for 30 -40 mins or until set.
