Asparagus Galette
A delicious asparagus lunch or picnic dish, (serves 4-6 & can serve more by increasing the quantities of ingredients). Ideal for a family lunch or picnic finger food.
I adapted this idea from a dessert recipe I saw in my local newspaper.

Ingredients
- PASTRY:
- 1 cup flour
- pinch of salt
- 80g. butter
- cold water
- FILLING:
- 1 bunch asparagus
- 3 eggs
- fetta cheese
- 2 tabs cous cous (or semolina)
- salt & pepper
Directions
- Rub butter into flour & salt
- Add cold water to form a smooth, stiff, dough.
- Rest in fridge for 20 minutes
- Roll out pastry into a circle approx 35cm diameter
- Heat oven to 200C.
- Separate one egg & paint dough with beaten egg yolk
- Sprinkle with cous cous (or semolina)
- Crumble fetta cheese over pastry leaving 2cm around edge
- Pile sliced asparagus on top
- Sprinkle with salt & pepper
- Fold pastry edge towards middle
- Brush pastry edges with beaten egg
- Pour over beaten egg allowing it to flow under folder pastry edge
- Bake for approx. 35 minutes till pastry is golden
- Serve warm or cold.
