Country Style Chicken
This is a favourite of my family and friends and is so quick and easy to make. I have changed it a little from when I first found it in a flyer about 20 years ago. It's a pasta dish in a rich tomato sauce with chicken and has a hint of chilli.

Ingredients
- 2 Boneless chicken breast (diced)
- 1 onion (chopped)
- 1 clove of garlic (crushed)
- 1 tsp of oregano
- half tsp chilli powder
- 1 tablespoon of oil
- 2 tablespoons of tomato paste
- 1 tsp of sugar
- salt and pepper
- 1 tin of chopped tomatoes
- (Zucchini or mushrooms optional)
- fettuccine
- Grated cheese
Directions
- Saute onion and garlic in oil.
- Add seasoning (chilli oregano sugar etc) and tomato paste.
- Cook mixture for a couple of minutes before adding the tin of tomatoes. Then add the chicken.
- In the meantime have a pot of hot water boiling for the pasta
- Simmer chicken for about 20minutes or until chicken is cooked
- add vegetables of choice in the last 5-10 minutes of cooking.
- Serve sauce on a bed of pasta and sprinkle with grated cheese.
- French bread and a salad is a really nice accompaniment.
