Country Style Chicken


This is a favourite of my family and friends and is so quick and easy to make. I have changed it a little from when I first found it in a flyer about 20 years ago. It's a pasta dish in a rich tomato sauce with chicken and has a hint of chilli.

Ingredients

  • 2 Boneless chicken breast (diced)
  • 1 onion (chopped)
  • 1 clove of garlic (crushed)
  • 1 tsp of oregano
  • half tsp chilli powder
  • 1 tablespoon of oil
  • 2 tablespoons of tomato paste
  • 1 tsp of sugar
  • salt and pepper
  • 1 tin of chopped tomatoes
  • (Zucchini or mushrooms optional)
  • fettuccine
  • Grated cheese

    Directions

    1. Saute onion and garlic in oil.
    2. Add seasoning (chilli oregano sugar etc) and tomato paste.
    3. Cook mixture for a couple of minutes before adding the tin of tomatoes. Then add the chicken.
    4. In the meantime have a pot of hot water boiling for the pasta
    5. Simmer chicken for about 20minutes or until chicken is cooked
    6. add vegetables of choice in the last 5-10 minutes of cooking.
    7. Serve sauce on a bed of pasta and sprinkle with grated cheese.
    8. French bread and a salad is a really nice accompaniment.
