Cheesy Crunchy Potato


This is a recipe i remember mum made alot as we were growing up. Its one of those lovely comfort foods that is perfect for a cold winters night. Its great either with cold meat like silverside or with hot meat. The crunchy bits on the side of the dish are the best bit i think were often argued about. I think it maybe an adaptation of an alison holst recipe but not sure. If you want to make a smaller amount just adjust the quantities. This really isn't a dieters friend.

Ingredients

  • 6 large Potatos
  • 11/2 C Grated Cheese
  • 1 pkt Cream of chicken soup mix
  • 1tsp Butter
  • 1-2 TbspToasted Breadcrumbs

Directions

  1. Wash, peel (optional) and slice potatoes.
  2. In a bowl mix greated cheese with the soup mix.
  3. In an ovenproof dish place a layer of potatos followed by a layer of cheese mixture.
  4. Continue in this way finishing with a cheese layer.
  5. Sprinkle breadcrumbs on top and put butter on top of this.
  6. Cover dish with tin foil and put in a 180 oven for 40 minutes.
  7. remove tinfoil after this time and continue to cook until the potatos are soft and breadcrumbs are crunchy about 10-20minutes.
  8. NB: You can pop this in the microwave for about five minutes before putting in the oven to speed up cooking. The longer you cook this the better it is.
