Easy Meatloaf With Fantastic Bbq Sauce


This takes the humble meatloaf to another level! It is glazed with an easily made BBQ sauce, making it filling, delicious and a real family winner! My kids love it and it is always a real hit when we make it for guests. It is also a favourite to take round to new mums. It makes so much there is always left overs for the sandwiches! What can be better - 2 meals from one!

Ingredients

  • LOAF
  • 500gm minced meat
  • 500gm sausage meat
  • 1 cup breadcrumbs
  • 2 onions finely chopped
  • 2 teaspoons curry powder
  • 1 egg
  • 1/2 cup of milk
  • 1/2 cup of water
  • 1 Tablespoon parsley finely chopped
  • salt
  • pepper
  • SAUCE;
  • 1/2 cup water
  • 1/2 cup tomato sauce
  • 1/4 cup worcester sauce
  • 1/2 cup brown sugar
  • 2 Tablespoons vinegar
  • 1 teaspoon instant coffee
  • 30 grams butter
  • 2 tablespoon lemon juice

Directions

  1. Heat oven to 180C.
  2. Line a roasting tin with silicone baking sheet or baking paper (makes clean up easier).
  3. Combine all the Loaf ingredients in a bowl and mix well.
  4. Shape into a long log in the roasting tin, or 2 smaller ones for quicker cooking.
  5. Bake for 30 minutes.
  6. Pour off any excess fat.
  7. Pour over the sauce and bake for further 45 minutes, basting often.
  8. SAUCE: Combine all sauce ingredients in a saucepan
  9. Slowly bring to the boil
  10. Reduce heat and simmer for 5 minutes.

This loaf is a winner. I cut into three and put two pieces into the freezer. It means that you have always got a meat meal, hot or cold in the freezer.
The topping is yummy and it is also great for sandwiches.
