Scrunchy Southern Sweet And Sour Fish


This dish is quick, easy and really compliments many of our great kiwi fish.

Ingredients

  • 1 fillet fresh fish, if your greedy 2.
  • Sweet and Sour
  • 1 onion, sliced
  • 1 small red pepper, cut into 2.5cm pieces
  • 1 small orange pepper, cut into 2.5cm pieces
  • 435g can of pinapple cubes in natural juice
  • 1 tbsp cornflour
  • 2 tbsp tomato ketchup
  • 2 tbsp light soy sauce
  • 1 tbsp white white vinegar
  • Batter
  • 1/4 cup cornflour
  • 1/2 cup plain flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk

Directions

  1. MAKING THE BATTER
  2. Mix the cornflour, flour, baking powder and salt into a bowl.
  3. Gradually add the milk, mix until smooth.
  4. Cut the fish into bite size pieces.
  5. Dip the fish into some plain flour, then dip into your batter mix.
  6. Deep fry your fish until golden and set aside.
  7. SWEET AND SOUR SAUCE
  8. Stir fry the onions, and peppers for 2-3 mins.
  9. Strain the pinapple cubes (reserving the juice) and add to pan.
  10. Mix together the cornflour and a little of the pinapple juice to form a paste. Add to pan
  11. Stir in the remaining juice, ketchup, soy sauce, vinegar and 135ml water. Bring to boil, stirring until sauce thickens.
  12. Stir in the fish and simmer for 1-2 mins.
  13. Serve with boiled rice.
