Antoinette's Chicken And Spinach Lasagne
A very simple easy to make, yet elegant and yummy chicken and spinach lasagne. Definatly a great twist on a traditional mince lasgane!
I have made this several times in the passed, always with great success and often have people asking me for the recipe and are surprised to discover its so simple!
I serve it with a nice green salad and some garlic bread.

Ingredients
- 2 large chicken breasts
- 1 packet large Lasagne sheets
- 2 tins watties pesto flavoured tomatos
- 250 grams chopped frozen spinach
- 1 large red onion
- Dash oil
- cheese sauce
- 2 tablespoons flour
- 2 tablespoons butter/margarine
- 1 cup milk
- 1 cup cheese
Directions
- Dice red onion finely
- Chop chicken breasts
- Heat oil in a fry pan and fry off onion
- Brown chicken peices
- Pour over tomatos and simmer mixture gently for 10 minutes
- While its simmering make your cheese sauce
- Melt the butter in a pot
- Add flour and mix throughly
- Slowly add your milk, making sure its mixed through before adding anymore
- Bring to the boil and simmer gently for 2 mins
- Mix in cheese and set aside
- Put half of your chicken mixture in a square casserole dish
- Place lasgane sheets on top, completly covering mixutre
- Top with the remaining chicken mixture
- Again top with lasagne sheets
- Pour over cheese sauce
- Bake at 180 for 45mins

Sorry your meant to add the spinach to the chicken and tomato mixture just before putting into the casserole dish. Mix it through and then split it and follow rest of the directions.
