Dingo Dawson's Lasagna
Nobody knows where the recipe name came from, but there's no disputing it's a humdinger.

Ingredients
- Sheets of Lasagne
- Sunflower oil
- 2 large onion-finely chopped
- 2 garlic cloves – finely chopped
- 900g beef mince – lean
- 1/3 cup tomato paste
- 1 ½ canned peeled tomatoes
- ½ cup of water
- 1 ½ tsp salt
- ¾ tsp pepper
- 1tsp sugar
- 1 1/2tsp basil
- 2 bay leaves
- 200g mushrooms
- 450g mozzarella cheese sliced
- 450g ricotta cheese
- Tomato sauce
- Parmesan cheese
Directions
- Heat oil, add onion and garlic, frying until soft. Add beef and cook until lightly brown. Stir in tomato sauce, canned tomatoes, tomato paste, water, salt, pepper, sugar, basil and bay leaves. Stir until bubbling, lower heat, cover and simmer for 2 hours, stirring occasionally. Add mushrooms and simmer for another hour.
- Remove sauce from heat and allow to cool to room temperature. Skim off fat and remove bay leaves.
- Spoon a thin layer of sauce over dish. Arrange lasagne strip over the sauce, layer mozzarella, ricotta, parmesan over lasagne.
- Continue adding layers finishing with sauce and parmesan.
- Bake in a moderately hot oven for an hour.
