Mama's Macaroni Cheese

This is a delicious decadent but very basic recipe, nothing like a good macaroni cheese to warm the cockles, especially Mama's homemade recipe - delicious, always make more than you need as it gets yummier every day...

  • 1kg Macaroni Pasta
  • 250g Bacon finely chopped
  • 250g Tasty Cheese grated
  • 50g Tasty Cheese grated for topping
  • Handful of Parsley chopped
  • 100g Parmesan Cheese grated
  • Nob of butter
  • 2 Tablespoons flour
  • 2 Onions finely chopped
  • 3 Cloves Garlic finely chopped
  • 500g Milk
  • 100g Cream
  • Salt + Pepper
  • Oil


  1. Boil water as per pasta packet instructions
  2. Add salt and a little oil to the water
  3. Cook pasta
  4. Once al dente drain, cool with cold water and spread in suitable casserole dish
  5. In a frying pan heat a tablespoon of oil
  6. Once heated gently fry the onion and garlic for 1-2 mins
  7. Then add the bacon and gently fry
  8. Once cooked take off the element and spread evenly over and through the cooked pasta
  9. Melt nob of butter in saucepan
  10. Mix flour in a cup with 1/2 a cup of milk
  11. Add to saucepan and add remaining milk gradually, continuously stirring, as it thickens, then add cream
  12. Bring to the boil, then immediately reduce (should be slightly thickened)
  13. Add cheese and parmesan and salt and pepper
  14. Keep stirring, cheese should melt into a nice,slightly thickened cheese sauce
  15. Add salt and lots of pepper
  16. Pour cheese sauce over the pasta
  17. Grate 50g of extra cheese and chop parsley and put on top with extra salt and pepper
  18. Put in oven at 180 degrees for 20 mins to bake
  19. Then grill until crispy on top
  20. Then eat while hot and creamy!
