So Quick! Mushroom Chicken
This recipe is a MUST TRY, sure winner for anyone that leads a busy lifestyle and have a family to cook for, or just a no hassle dish for pot luck dinners.
This recipe was given to me by another busy mum to save time fussing with dinner.
Such tender moist chicken, just beautiful.
Is delicious served with small roasted vegetables, and fresh greens.

Ingredients
- 4 skinless chicken breasts (Can slice through centre if very thick)
- 1 1/2 teaspoons paprika
- approx 8-10 mushrooms sliced
- 1 1/2 Tablespoon butter
- 2 teaspoons cornflour
- 1/2 cup cream
- 1 clove garlic chopped fine
- 2 tablespoons chopped parsley
- Garlic Salt
Directions
- Pat chicken dry,
- Place in microwave dish large enough to lay chicken flat in 1 layer.
- Melt butter and pour over chicken, turn chicken so coated.
- Sprinkle with part of paprika.
- Place sliced mushrooms over the top.
- Cover and microwave on high for 6 minutes.
- Reposition and turn chicken if necessary.
- Mix cornflour, garlic salt, cream & remaining paprika.
- Pour over chicken, sprinkle with parsley.
- Cook uncovered for 3-4 minutes.
- Stand so chicken is not pink.
- Serve and enjoy:-)
