Easy Celebration Salad


This is a fantastic salad to have at Christmas, easily prepared before hand, leaving you free to enjoy the celebrations. .
I make it for many different occassions, .
I use fresh prawns,( frozen and thawed works well)

This salad can be tossed some hours ahead, dressing and advocado added near serving time.

Ingredients

  • 600 g cooked prawns. (peeled and deveined)
  • 1 med white onion. (thinly sliced and separated into rings)
  • 400g can or jar of artichokes hearts. (cut into quarters)
  • 2 tabs chopped parsley,
  • 2 tabs chopped chives.
  • 400g can baby sweetcorn.
  • 1 Avocado.
  • 50ml French Dressing.( Season well with garlic salt and freshly ground black pepper)

Directions

  1. Toss together the first 6 ingredients, prawns, onion rings, artichokes, baby sweetcorn, parsley and chives.
  2. Add dressing and advocado close to serving time.
  3. Serve with fresh ciabratta bread, and a nice wine.
