Poppys Country Chicken Casserole
Great to warm up the family on a winters night.

Ingredients
- 1kg boned chicken thighs
- 1 cup of diced apple
- 3tb port or brandy
- 1/3 cup red wine vinegar
- 1 cup dry white wine
- Bay Leaf
- 1tsp thyme leaves
- 2 cloves of garlic chopped
- salt & pepper
- 1/2 cup flour
- 1 cup pitted prunes
Directions
- Cut up thighs coat in flour and brown
- Mix together
- Mix chicken with all other ingredients
- Simmer for 1 hour
- Add 1 cup of frozen beans 5 minutes before serving.
