Ingredients
- 1-2kilos topside beef
- 2 teaspoons salt
- 1 teaspoon allspice
- half teaspoon pepper
- 2 bay leaves
- 1 tablespoon molasses
- 3 tablespoons butter
- 3 tablespoons brandy
- 3 medium onions
- one third cup of stock
- 2 tablespoons white vinegar
- quarter teaspoon anchovy paste
- 1 cup cream
Directions
- Rub the meat with salt pepper and allspice.
- Heat butter and brown meat all over. Pour brandy on meat.
- Add all ingredients and blend.
- Simmer covered
- After approx 2 hours, remove and slice meat.
- Make gravy from pan dripping.
- Fold in a quarter teaspoon of anchovy paste and 1 cup whipped cream.
