Apricot And Capsicum Chutney - Microwave Recipe


I love the Apricot and Capsicum Chutney that you can buy but it is so expensive. One day as I had some spare apricots and capsicum I thought that I would experiment myself.
This is the original quantity I used as I also wanted to cook it in my microwave. The finished product was quite pleasing and a success with family & friends. I have since doubled and tripled the recipe to make a bigger quantity. This Chutney is a lovely golden colour with specks of red in it and has been given as presents many times. As I'm always asked for the recipe, I now include a little card with it on tied to the jar.

Ingredients

  • 200g fresh Apricots chopped, 1 finely chopped onions, 1/2 cup red capsicum diced, 2 cl garlic chopped, 1/2 cup vinegar, 1/2 cup sugar, 1 teasp ground ginger, 1 teasp greggs coriander & garlic, 1 tablsp yellow mustard seeds

Directions

  1. Chop finely or process the apricots and onions. Chop the capsicum and mix together with the apricots and onion in a microwave proof bowl. Add rest of ingredients and mix. Cook covered on high for 20-30 minutes until thick. Pot and seal while hot.
  2. I have also used dried apricots to make this so I now have a year round supply.
