Awesome Stuffed Mussels
This has to be the BEST ever recipe for mussels,I got this recipe several years ago from an acquaintance and I know it's a winner,I entered it into the seafood section of a contest and WON!!!!,I take it whenever a plate is required and no matter how many I make up I still hear the usual complaint "I never got any,can you make more next time" it doesn't matter that I may have made up 100 it's always NEVER ENOUGH!

Ingredients
- 4 Dozen Mussels (in the shell) or as many as you want.
- 1 tub softened cream cheese
- 4-6 finely chopped spinach leaves
- 4-6 cloves finely chopped garlic
- Breadcrumbs
- Fresh ground black pepper
- Flour
- Eggs (3)
Directions
- Shell mussels and place in colander to drain the juices.
- Place cream cheese,spinach leaves,garlic and black pepper in food processer and mix until all blended.
- Open each mussel and place some of the mix inside & close again.
- Dip each mussel in flour then egg then breadcrumbs,allow to sit in fridge for several hours if possible to let crumbs set.
- Shallow pan fry in oil until golden about 2 minutes per mussel,turning them as they are cooking depending on size of pan they can be done in batches of 6 or so.

Hi, think ahead and for the next time, recycle : ) , wash as many of the shells as poss, dishwasher can work ok, its a little tricky. Make the next batch in half shells and you can use your fav. marinated varieties of mussels, (remember to still drain really well, and you get a bit more of a bite because of the vinegar) or use the pre shelled fresh mussels. This makes it faster, ok they aren't really 'stuffed' anymore but there's no shelling to do. Have fun and Yum!
