Being vegetarian it's not easy to find good finger food.
One day i was with a friend and we wanted some thing to do with the lefted over mashed potatoes.
And wow came up with this ...Yummy

Ingredients

  • 4 sheet puff pastry, thawed
  • 4 boiled potatoes, mashed
  • 1 large onion, thinly slice
  • 1 garlic clove, crushed
  • 150g baby spinach
  • 350g ricotta cheese
  • Salt and freshly ground black pepper and lemon pepper
  • 1 Cup of grated tasty or mozzarella cheese

Directions

  1. Preheat oven to 180°C.
  2. Place spinach and potatoes , ricotta , garlic, onion and cheese and combine in a large bowl.
  3. Season with salt and pepper and lemon pepper.
  4. Cut pastry in half crossways.
  5. Place a portion of mixer on the middle of the pastry and pat the mixer into a long shape.
  6. Brush the top of the pastry with milk and then cut each roll cross-ways into about 4 rolls.
  7. Place rolls on prepared trays about 2cm apart.
  8. Bake for 20 minutes until pastry is puffy and golden .
