Charming Cheese Busters
Friends about to arrive? Plenty of drink but no nibbles?? Try this simple recipe which takes 30 mins go to wo, hey presto, nibbles to beat any bought ones.
They won't believe you cooked them yourself.
Recipe from a friend from Otago light years ago (like 30 years!), and is a tried and tested favourite.
Ingredients
- 3 oz grated tasty cheese (I like Mainland)
- 3 oz butter (chilled)
- 6 oz flour
- Salt and pepper to taste
- Small amount (pinch) cayenne pepper (to taste!)
- No more than half cup of chilled water and milk (50/50 mix)
Directions
- Turn oven on to heat to 200 deg celcius.
- Rub the ingredients lightly together with your fingers
- Add salt pepper and cayenne pepper. Flick through with a fork.
- Stir in small amounts of the water/milk mix with a fork.
- Form a ball using a little extra flour if too wet. (Better not let that happen, the drier the better, just enough to hold ingredients together)
- Chill for 10 mins wrapped in gladwrap. The oven will be almost hot enough.
- Roll out very thinly, on a floured board. Cut into 1/2 inch parallel slices then into approx 3-4 inch lengths (cut on diagonal don't worry about the rough edges)
- Prick with a fork, each piece several times.
- Place on a lightly greased oven tray middle of oven.
- Cook 10 mins, watch like a hawk so as not to overcook.
- Lift off the tray onto a wire cooler a few mins after removing from the oven with an egg slice.
- You won't have to wait long for the YUM YUM from your guests.
- Will store once cold in an airtight container for weeks. Just heat up again before serving.
