I am going to try this batter recipe today with soda water and fry the oysters for my better half Will let you know how it turns out .sounds like a good recipe from the reviews .
This is my first time making battered fried mussels at home, followed the recipe because of the good reviews. Followed the recipe and instructions to the T, I used Lemonade Sprite a little more than instructed, until well mixed and thick but flexible I didn’t even dry my mussels out and this batter did not stick did not crumble cooked BEAUTIFULLY! And when I taste tested the first mussel, Delicious! Better than any takeaway and the taste of the batter and mussels together blend nicely, no mess, super easy to cook!, I turned my Nz stove on 3 to cook perfectly. Great recipe !

Hi
I haven’t tried this exact recipe but something similar with Sprite and came no where close to the picture you’ve displayed above – SO Golden, SO perfect.
Is that Pic from your actual attempt at this Recipe and how does one get such a perfect rustic batter as I would call it?
Thanks
To remove the sugar factor, use plain soda water in place of lemonade.
Great tip, thanks for sharing!
Have tried this recipe and it was a hit with the family! Even my 8yr old who absolutely hates batter actually ate it, so I am about to use this batter again.
