Instead of a crumble, use your rhubarb to make a pie! Quick prep time and not much baking required.
Make Short Pastry and line flan dish, put in fridge to keep cold.
Put all filling ingredients together and mix well. Do not leave out the flour as this thickens the juice.
Put into the prepared dish and smooth the top. decorate with any left over pastry and cook in a hot oven 200 deg. C for approx. 30 minutes or until it looks Fantastic.
Serve hot with cream or Ice cream , or cold as a snack
