Why did my egg cook into little scrambled bits instead of mixing in smoothly?
Add the egg to the butter, sugar and cocoa mixture before it goes on the heat, or take the pan off the heat first and beat the egg in quickly with a wooden spoon before adding the biscuits. Several long-time readers use this method and don’t have the problem.
There isn’t enough fudge mixture to cover a full packet of biscuits – is that normal?
A few readers have hit this too. Don’t boil the mixture, just melt it, then take it off the heat straight away before mixing in the egg and biscuits – boiling it down too far seems to be what’s costing the volume.
