Ingredients

  • Caramel:
  • 600g condensed milk
  • 50g butter
  • 1 T golden syrup
  • Oatie:
  • 1 1/4 cups wholemeal flour
  • 3/4 cup plain flour
  • 3/4 cup desicatted coconut
  • 1 1/2 t baking powder
  • 1 1/4 cup rolled oats
  • 1 1/4 cups brown sugar
  • 2 eggs beaten
  • 225g melted butter
  • 2 t coffee essence
  • 1 t vanilla essence

    Directions

    1. Line the base of a 26cm loose based cake tin and grease well.
    2. Make the caramel by combining all the ingrediants in a saucepan, stir over low heat until thick and melted, set aside to cool.
    3. Preheat oven to 180 degrees.
    4. Combine dry ingrediants, mix egg, butter, coffee and vanilla essence and stir into dry ingrediants. Reserve about 1/4 for the topping and press the remaining into the base of the pan. Pour the cooled caramel over the top. Dot with the remaining mixture so it forms a loose crumble like topping.
    5. Place in the oven with a sheet of foil over the top to prevent browning. After 40 minutes, remove and leave to cool.
    6. Cut into thick wedges and serve with thick natural yoghurt, or whipped cream and berries.
