Coffee Caramel Oatie Slice
A lovely caramel filled crunchy oatie slice - finished off with some whipped cream and berries, it is sure to impress.

Ingredients
- Caramel:
- 600g condensed milk
- 50g butter
- 1 T golden syrup
- Oatie:
- 1 1/4 cups wholemeal flour
- 3/4 cup plain flour
- 3/4 cup desicatted coconut
- 1 1/2 t baking powder
- 1 1/4 cup rolled oats
- 1 1/4 cups brown sugar
- 2 eggs beaten
- 225g melted butter
- 2 t coffee essence
- 1 t vanilla essence
Directions
- Line the base of a 26cm loose based cake tin and grease well.
- Make the caramel by combining all the ingrediants in a saucepan, stir over low heat until thick and melted, set aside to cool.
- Preheat oven to 180 degrees.
- Combine dry ingrediants, mix egg, butter, coffee and vanilla essence and stir into dry ingrediants. Reserve about 1/4 for the topping and press the remaining into the base of the pan. Pour the cooled caramel over the top. Dot with the remaining mixture so it forms a loose crumble like topping.
- Place in the oven with a sheet of foil over the top to prevent browning. After 40 minutes, remove and leave to cool.
- Cut into thick wedges and serve with thick natural yoghurt, or whipped cream and berries.
