Hearty Flavourful Pizza Soup
This soup was created by throwing together leftovers during a camping trip and it went down so well that it's now a family favourite!
Quick and easy to prepare and just fantastic on a cold day as a mid afternoon snack or a main meal.

Ingredients
- 1 can tomato soup (Campbell's Velish is my preference)
- 1/4 cup salami, finely cut into strips or diced.
- 1/4 grated mozzarella cheese
- 1 cup uncooked rice.
- Optional extras:
- Fresh basil
- Sliced and pitted black olives
- Finely diced mushrooms
Directions
- Cook rice as directed on packet.
- While rice is cooking, mix the salami and soup together in a pan and heat on stove top.
- Mix in rice once cooked, add in any optional ingredients and keep stirring until desired temperature is reached.
- Place in bowl and sprinkle over mozzarella. Enjoy!
