Nz - French Onion Soup


Incase of any cold snaps this is a real gem as a light lunch. It's got French in the title but I'm a kiwi! and it's my secret recipe. Well was my secret recipe.

Ingredients

  • 25g Butter
  • 1 large white onion,sliced
  • 1 small glass of dry white wine
  • 1 Tbsp white flour
  • 1 Litre cold water
  • 1 litre hot vegetable or chicken stock

Directions

  1. Pre heat oven to 180
  2. Melt the butter in a round dish, over medium to high heat
  3. add onions and let them cook until lightly brown
  4. Once the wine is almost evaporated, lower the heat add flour, stirring constantly. Cook for a minute or two.
  5. Add the water and bring to the boil. Lower the heat and pour in the hot stock, simmer for half an hour.
  6. Season to taste with salt and pepper.
  7. Prepare garnish of croutons, but from a bread stick.
  8. Enjoy!
