Wicked Lamb Lasagna


I've tried many different lasagna recipes over the years, but they didn't really hit the spot until I came up with the following combination of ingredients. I've since made it for heaps of people and many have commented that it's the best lasagna they've ever had. It can be made with beef, but for a distinctly Kiwi flavour, the secret ingredient is the lamb mince. The 'wicked' part come from the chili, but feel free to add as much or as little of the hot chili to suit your taste.

Ingredients

  • 400g lamb mince
  • 1 x large onion
  • 5-10 x fresh mushrooms
  • 1 x 750g jar of your favourite past sauce (I think 'Five Brothers - Romano & Garlic' works best)
  • 1 x tablespoon Tuscan seasoning
  • 1 x teaspoon minced chili
  • 1 x 500g tub of cottage cheese
  • Fresh lasagna sheets
  • Grated cheese

Directions

  1. In a deep frypan, brown mince, onion and mushrooms with Tuscan seasoning, then add pasta sauce and chili and stir together till warmed through.
  2. In a large baking dish, spoon on a layer of the sauce mixture, then cover with a layer of lasagna.
  3. Spread a third of the cottage cheese onto the pasta and cover again with sauce.
  4. Repeat till you have three layers of lasagna / cottage cheese / sauce, finishing with the top layer as lasagna.
  5. Cover top layer with grated cheese (or a white cheese sauce if you feel so inclined.)
  6. Bake for 45 minutes in a moderate oven until lasagna is soft and cheese is golden brown.
  7. Serve with fresh salad or hot green veges on the side.
