Veggie Overload Soup
My mums vegie soup - cures colds in a flash and quells those veggie cravings.

Ingredients
- 1/2 filled pot of water
- 1/4 pumpkin, diced
- 2 carrots, diced
- 2 onions, diced
- 2 small potatoes, diced
- 1 kumara, diced
- 2 capsicums, diced
- 1 swede, diced
- 1 leek, diced
- 1 can tomato soup
- 1 cup chicken stock
- 2 tsp curry powder
- 3 or 4 cloves garlic, crushed
- salt & pepper to taste
- Sour cream *optional*
Directions
- Combine all ingredients in a large soup pot and simmer together for 1 hour.
- Before serving mash the soup so it is thick but still has some chunky vegies. Or you can puree the soup in a food processor if you prefer a smoother consistency.
- If you like a creamier soup, stir in 1 tsp of sour cream to your bowl before serving.
