Veggie Overload Soup


My mums vegie soup - cures colds in a flash and quells those veggie cravings.

Ingredients

  • 1/2 filled pot of water
  • 1/4 pumpkin, diced
  • 2 carrots, diced
  • 2 onions, diced
  • 2 small potatoes, diced
  • 1 kumara, diced
  • 2 capsicums, diced
  • 1 swede, diced
  • 1 leek, diced
  • 1 can tomato soup
  • 1 cup chicken stock
  • 2 tsp curry powder
  • 3 or 4 cloves garlic, crushed
  • salt & pepper to taste
  • Sour cream *optional*

Directions

  1. Combine all ingredients in a large soup pot and simmer together for 1 hour.
  2. Before serving mash the soup so it is thick but still has some chunky vegies. Or you can puree the soup in a food processor if you prefer a smoother consistency.
  3. If you like a creamier soup, stir in 1 tsp of sour cream to your bowl before serving.
