Yummiest Surprise Cake/Pudding Ever!
This is the best cake/pudding ever. It is so quick and easy and versatile to make. It was originally a plum cake, but I make it with any fruit I have on hand. I have used Plums, Banana, Kiwifruit & even tinned Plums, Apricots & Peaches all work well. This cake is a BIG hit with "my 3 sons"!

Ingredients
- 5 Plums (approx) or whatever fruit you have on hand (even well drained tinned fruit works well).
- 1 T Sugar
- 1 t Cinnamon
- 125g Butter
- 1 c Sugar
- 2 Eggs
- 1 c Flour
- 1 t Baking Powder
Directions
- Preheat oven to 180oC.
- Grease & line a 20 cm round cake tin.
- Slice your fruit of choice, sprinkle with sugar & cinnamon, set aside.
- Beat butter & sugar, beat in eggs 1 at a time till light & fluffy.
- Add flour & baking powder.
- Pour into tin.
- Arrange your fruit over the mixture.
- Bake approx 30 minutes or when skewer comes out clean.
- Dust with icing sugar & serve warm or cold with cream or yoghurt.
