Yummiest Surprise Cake/Pudding Ever!


This is the best cake/pudding ever. It is so quick and easy and versatile to make. It was originally a plum cake, but I make it with any fruit I have on hand. I have used Plums, Banana, Kiwifruit & even tinned Plums, Apricots & Peaches all work well. This cake is a BIG hit with "my 3 sons"!

Ingredients

  • 5 Plums (approx) or whatever fruit you have on hand (even well drained tinned fruit works well).
  • 1 T Sugar
  • 1 t Cinnamon
  • 125g Butter
  • 1 c Sugar
  • 2 Eggs
  • 1 c Flour
  • 1 t Baking Powder

    Directions

    1. Preheat oven to 180oC.
    2. Grease & line a 20 cm round cake tin.
    3. Slice your fruit of choice, sprinkle with sugar & cinnamon, set aside.
    4. Beat butter & sugar, beat in eggs 1 at a time till light & fluffy.
    5. Add flour & baking powder.
    6. Pour into tin.
    7. Arrange your fruit over the mixture.
    8. Bake approx 30 minutes or when skewer comes out clean.
    9. Dust with icing sugar & serve warm or cold with cream or yoghurt.
