Best-Ever Chocolate Cake


Makes a great Birthday Cake.
Leaving in cake tin over a few days it gets better and better.
Is always lovely and moist, certainly a never fail cake.

I got this recipe from a girl friend a few years ago, which was a recipe handed down in her family throughout the generations.

I really like this recipe because it never fails and makes such a huge delicious cake.

It is a real winner as I make it for each of my family members on their birthday and I get great comments on how lovely and tasty it is.

Ingredients

  • 2 Cups of water
  • 3 cups of castor sugar
  • 250 gr butter, chopped
  • 1 tsp baking soda
  • 1 third of a cup of cocoa
  • 3 cups of self raising flour
  • 4 eggs, lightly beaten

Directions

  1. Combine water, sugar, butter, sifted cocoa and soda in a large pot.
  2. Stir over low heat without boiling until sugar is disolved.
  3. Then bring to the boil and simmer uncovered for 5 minutes.
  4. Transfer to an electric mixer bowl and cool for 10 minutes.
  5. Then add sifted flour alternatively with eggs, beating slowely.
  6. Beat until mixture is smooth.
  7. Line roasting dish with baking paper.
  8. Pour into dish and place in pre-heated oven.
  9. Bake for 50 minutes at 180 degrees.
  10. Leave to cool.
  11. Icing:
  12. Mix together in kitchen wizz -
  13. 200 gr margarine
  14. 200 gr icing sugar
  15. 3 Tablespoons cocoa (or a little more if you like it darker)
  16. Smooth over top of cake and leave to set

Fantastic cake - I was searching for a cake to make for my kids birthday - this is truely what it says - lovely and big and very moist and yummy - just had to cut the time back a bit for my oven!
