Best-Ever Chocolate Cake
Makes a great Birthday Cake.
Leaving in cake tin over a few days it gets better and better.
Is always lovely and moist, certainly a never fail cake.
I got this recipe from a girl friend a few years ago, which was a recipe handed down in her family throughout the generations.
I really like this recipe because it never fails and makes such a huge delicious cake.
It is a real winner as I make it for each of my family members on their birthday and I get great comments on how lovely and tasty it is.

Ingredients
- 2 Cups of water
- 3 cups of castor sugar
- 250 gr butter, chopped
- 1 tsp baking soda
- 1 third of a cup of cocoa
- 3 cups of self raising flour
- 4 eggs, lightly beaten
Directions
- Combine water, sugar, butter, sifted cocoa and soda in a large pot.
- Stir over low heat without boiling until sugar is disolved.
- Then bring to the boil and simmer uncovered for 5 minutes.
- Transfer to an electric mixer bowl and cool for 10 minutes.
- Then add sifted flour alternatively with eggs, beating slowely.
- Beat until mixture is smooth.
- Line roasting dish with baking paper.
- Pour into dish and place in pre-heated oven.
- Bake for 50 minutes at 180 degrees.
- Leave to cool.
- Icing:
- Mix together in kitchen wizz -
- 200 gr margarine
- 200 gr icing sugar
- 3 Tablespoons cocoa (or a little more if you like it darker)
- Smooth over top of cake and leave to set

Fantastic cake - I was searching for a cake to make for my kids birthday - this is truely what it says - lovely and big and very moist and yummy - just had to cut the time back a bit for my oven!
